Interesting Stir-fry...

I seem to be making many of these... Something to do with ingenuity in the face of adversity... or in other words, I has bugger all ingredients so find new ways to use what I do have...

So to actually put down what I did with this one...

Chop 2 Chicken Breasts and half a jar of German hotdogs. Put a pot of pasta onto boil and start stir-frying meat.

While meat is cooking, make the "stock". This consisted of lemon juice, red wine, chilli flakes, chilli powder, cinnamon, ginger, sea salt and vegetable stock. Oh and demerera sugar too! Oh and topping up the mug with hot water and mixing.

Added frozen peas to the cooked meat and then added about half the stock and let it simmer while the pasta finished cooking. Oh and I threw some sultanas in as well - just because they were there...

Incidentally, stir-fried chicken plus red-wine stock makes chicken that looks like pork.

Drain the pasta then add it to the rest of the stir-fry before adding the rest of the stock and stirring. Let it cook through for a few minutes (turning the heat up from simmer) while stirring then take off the heat and serve.

Goes well with the rest of the red wine :)

And it's very nice if I do say so myself... quite sweet - possibly overdid the demerera...
